It was likely a garden crop grown for local consumption and barter for decades. Unlike other coffee regions, we have the story of a priest named Francisco Romero, who could be called the father of commercial coffee cultivation in Colombia. The folkloric tale goes that in the early 1800’s, Father Francisco, hearing confessions in the northeastern town of Salazar de la Palmas, assigned planting coffee to his parishioners as penance for their sins. The Archbishop of Colombia heard about this and ordered all priests to adopt the practice. Commercial production of coffee expanded quickly, moving into regions where the growing conditions were ideal. \u003c\/p\u003e\n\u003cp\u003eThe municipality of Inzá is located in the corner of the Department of Cauca, bordering with Tolima and Huila, and looking out to the west over the Pacific Ocean. Situated on\u003cbr\u003ethe “Macizo Colombiano” (the Colombian Plateau), which make up the high peaks of Tolima and Huila, the region is an important source of water and wildlife, in addition to being prime coffee growing land. This coffee was produced by 52 smallholder coffee producers hailing from the neighbouring sub-municipalities of Pedregal and San Antonio. Every single microlot delivered was cupped and reserved due to its scoring 85 points or above by the community cupping lab, funded by Mercanta Exporting Partners, Pergamino, who are based in the Department of Antioquia. These stringent standards result in very limited quantities of this exceptional blend of 70%+ Caturra and approx. 30% Variedad Colombia being made available for export. Cauca’s violent past, with a heavy presence of FARC guerrillas, had historically prevented the FNC (Colombia’s excellent national coffee board) and specialty-focused exporters from establishing a presence in the region. As violence has diminished, it has enabled the growers in the region to seek increased access to markets for quality, not only taking advantage of the region’s wonderful coffeegrowing conditions but also the economic resource that nearby tourist destinations bring (for instance, the World\u003cbr\u003eHeritage Site “Parque Nacional Arqueológico de Tierradentro”). We found out about this coffee through our good friends at Pergamino, who serve it in their own flagship specialty café in Medellin. Like all producers in Colombia, Pergamino spent many years\u003cbr\u003ehelplessly riding the roller coaster of international coffee prices. They had to invest, year after year, in their crops without knowing what price they would secure. As the saying\u003cbr\u003egoes in Colombia, there were years of lean cows and years of fat cows – the former being more common than the latter. They often sold their coffee to large exporters, never\u003cbr\u003eunderstanding its unique sensory coffees, nor in whose hands it ended up for what price. When they began selling their coffee directly to importers and roasters, everything\u003cbr\u003echanged. When they extended the model to small holder farmers in Antioquia, they also changed everything for them.\u003c\/p\u003e\n\u003cp\u003eThis coffee is a blend of two lots from our exporting partner in Colombia, Pergamino. Both of these lots are collections from smallholders throughout two different\u003cbr\u003eregions in the country. These coffees were then carefully blended and sent through the Hanseatic Sugarcane EA Decaf process. Ethyl acetate occurs naturally in fruits, and this is\u003cbr\u003ewhy it is the best natural option for decaffeination. For this process, sugars from sugarcane are fermented to create ethyl alcohol. This is then mixed with acetic acid to create ethyl acetate.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThe EA decaffeination process begins with a pretreatment steaming the coffee beans at a low pressure to remove the silver skin, or the thin layer of skin on the coffee beans. The\u003cbr\u003ecoffee beans are then moistened with hot water to swell and soften, to catalyze the hydrolysis (the chemical breakdown of a substance due to reaction with water) of\u003cbr\u003ethe caffeine. Essentially, the caffeine is bonded to chlorogenic acid inside the coffee, and this process breaks them apart to remove the caffeine. The beans are then\u003cbr\u003emoved through an extractor, where they are repeatedly washed with the natural solvent, ethyl acetate. This occurs several times in order to remove 97% of the caffeine content\u003cbr\u003ewithin the coffee. Surprisingly, the weight of the coffee is reduced by 3%. The\u003cbr\u003eEA method gently extracts the caffeine from the coffee without using excessive heat that may damage the beans. Once this process is complete, a flow of low-pressure steam\u003cbr\u003eis passed over the beans to remove any remaining ethyl acetate, which will evaporate at 70°C once the coffeebeans are roasted.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eLastly, the coffee is vacuum-dried until the moisture content of the coffee is brought back to the original moisture level when it arrived at the EA processing facility – typically\u003cbr\u003ebetween 10-12%. In Guatemala, coffee is traditionally processed individually by smallholder farmers, making it difficult to manage and guarantee quality from lot to lot. Their team in Ayarza works with numerous farmers in the region, paying a premium for ripe cherries and processing them centrally to maintain strict standards throughout.\u003c\/p\u003e\n\u003cp\u003eFrancisco Nájera is one of many local producers theh work with at Ayarza cherry mill. Francisco was born in El Naranjo town in the Jutiapa department of Guatemala. He is 30 years old, married with two children and has been working in the coffee production business for around 15 years. Cultivating various small plots covering just under 1ha in total, Francisco is a small producer but a great entrepreneur, and has excelled in the coffee production business despite the adversity and constant threat of various coffee diseases. The lake was formed by two massive volcanoes that collapsed and formed a large crater.\u003cbr\u003eThe legends surrounding this lake are numerous, and the bottom has never been found. There is a large white rock of a petrified woman who didn’t follow the orders of Jesus. In short, there are simply too many good stories about Ayarza to do it justice!\u003c\/p\u003e\n\u003cp\u003eOlam Guatemala always knew the region had massive potential to produce speciality coffee, but the cups that we found were usually solid but unsurprising. Two years ago, Olam rented a wet mill at 1,500 meters on an RFA-certified farm. The quality of their washed coffee was much better than we expected. Next we tried some naturals by buying cherries in Ayarza and transporting it to a region that had plenty of patios and good wind for drying. The beginning of the process is the same for all: strict picking and reception standards (picked ripe with less than 3% of greens), cherry floatation, de-pulping and screen sorting to remove any remaining under-ripes. From this point, there are two paths that the coffee can take.\u003c\/p\u003e\n\u003cp\u003ePath 1: The coffee is fermented for 14 hours using a Fermaestro to determine the end of the fermentation, washed, dried on the patio and finished in a mechanical drier.\u003c\/p\u003e\n\u003cp\u003ePath 2: the coffee is sent straight to the mechanical washers (removing the mucilage), sent through a Centriflux to remove excess water, then dried at low temperatures mechanically.\u003c\/p\u003e\n\u003cp\u003eNatural factors, along with the two paths above, mean that the coffee can exhibit subtly different profiles. One profile tends to be more acidic, and the body is a touch lighter; this exhibits the winey character that cuppers often catch on fruity lots, so we call this ‘Vinoso’. The region benefits from fertile volcanic soil, high altitudes and a temperate climate with moderate rainfall, all of which contribute to the production of high-quality coffee with distinct flavours and bright acidity. They soon became the go-to trees for many growers in Kenya due to their deep root structure, which allows them to maximise scarce water resources and flourish even without irrigation. They are cultivated with a serious eye towards sustainability and Good Agricultural Practices, with minimal environmental impact where possible. Batian is a relatively new variety introduced by the Kenya Coffee Research Institute (CRI) in 2010. Batian is named after the highest peak on Mt. Kenya and is resistant to both CBD and CLR. The variety has the added benefit of early maturity – cropping after only two years. Similar to Batian, Ruiru 11 is a new variety known for its disease resistance and high yields.
