
What to Expect
This is a clean, bright washed coffee from Timor-Leste's Rotutu cooperative that leans into stone fruit sweetness without losing its structure. Grown at 1420 metres by a small group of twelve farmers, it's a medium-light roast that shows what Typica and Timor Hybrid can do when processed with care.
The Cup
The body is syrupy but not heavy — it coats your palate without weighing it down. Acidity is bright and citric, with orange and peach notes leading the way, backed by a floral hibiscus character that keeps things interesting. There's a treacle sweetness that rounds out the finish. This is a clean cup with no funk or ferment character — the washed process keeps everything transparent and origin-forward.

How to Brew This Coffee
A V60 will give you the best clarity and let the peach and hibiscus notes shine through without muddying the syrupy body. Filter methods like a Kalita Wave or Chemex work well too, offering a slightly rounder cup while preserving the brightness. An Aeropress is a solid choice if you want a bit more body and sweetness — it'll emphasise the treacle character while keeping the acidity in check.
