The Rotutu farmers have spent four years refining this process, and the result is a cup that leans into peach and stone fruit with a hibiscus-like floral note threading through.
The Cup
The body sits somewhere between medium and juicy — not heavy, but with enough weight to carry the fruit character. Acidity is moderate and malic, like biting into a ripe peach rather than a sharp citrus punch. The ferment character is present but not overwhelming: there's a winey funk that some drinkers will find intriguing and others will find too much. It's clean enough to avoid being boozy, but it's not a neutral, washed-coffee experience either.
