What to Expect
This is a low-caffeine coffee that doesn't taste like one. Los Nogales uses a farm-level decaffeination process that strips out 95% of the caffeine while keeping the flavour intact — and then pushes complexity further with extended sourdough fermentation. The result from this Colombian washed Caturra is a clean, layered cup with stone fruit sweetness, creamy body, and a floral lift.
The Cup
Expect a medium body with a creamy, almost silky texture — the caramelised banana note is real, not marketing speak. Acidity is moderate and malic, leaning toward nectarine and stone fruit rather than citric brightness. The bergamot adds a floral, tea-like quality without tipping into perfume. This is a clean, washed-process coffee with no funk or ferment character, despite the extended fermentation — that step builds sweetness and complexity, not wildness. The low-caffeine process has done its job: bitterness is notably absent, and the cup feels rounder and softer than a standard Colombian washed coffee.
Who This Is For
This suits anyone who wants to cut caffeine without sacrificing flavour, and anyone who finds standard coffee too bitter or acidic. It's also a strong choice for evening drinking or those sensitive to caffeine but unwilling to compromise on cup quality.
If you're chasing high-octane brightness or intense acidity, this won't deliver — the process smooths those edges by design.
Best for: Drinkers who want flavour without the jitters, and those who prefer a clean, sweet, low-bitterness cup.
How to Brew This Coffee
The filter methods will highlight the stone fruit and floral notes while keeping the body clean and approachable. Aeropress works well if you want a slightly fuller body and more control over extraction — the lower caffeine content means you can push it a bit without bitterness creeping in. For espresso drinkers, this handles espresso with ease, delivering a sweet, creamy shot with minimal edge — ideal if you want an afternoon or evening espresso without the sleepless night.

Los Nogales in Pitalito, Huila, was founded around 80 years ago by Ricardo Hernández. His youngest son, Ricaurte Hernández, drove the farm’s success, and alongside his wife Suldery Arango led it to win Colombia’s Cup of Excellence in 2005.
Ripe cherries are carefully selected, cleaned, and density-sorted before pulping. The beans undergo an innovative low-caffeine process at their farm. They use hot water (at 80°C) and a natural solvent derived from coffee pulp to remove around 95% of caffeine while preserving flavour.
An additional 96-hour fermentation follows, using a sourdough starter culture maintained at 18°C, enhancing complexity and sweetness. The coffee is then slowly dried over 8 days in controlled conditions to achieve optimal moisture and stability.
This complex and unique process drastically reduces this coffees bitterness. This coffee has a vibrant and layered taste profile with notes of sweet nectarine, the creamy texture of caramelised banana, and floral hints of bergamot.
