What to Expect
This washed Mexican from Los Altos de Chiapas sits somewhere between classic chocolate-forward Central American character and something brighter. The lime marmalade note signals a citric edge you don't always get from Mexico, while the dried fig and caramelised sugar ground it in familiar sweetness.
The Cup
The body is medium and round, with a silky mouthfeel that carries the sweetness well. Acidity is moderate and citric, more pronounced than you'd expect from a typical Mexican coffee but not aggressive. The washed process keeps everything clean and origin-forward, letting the altitude range (1000–2000 MASL) show through with good clarity. There's no funk here, just straightforward, approachable flavour with a touch more brightness than the usual chocolate-nut profile.
Who This Is For
This suits drinkers who want something familiar but not boring, with enough acidity to keep it interesting without veering into tart territory. If you're after a heavy, low-acid cup or something intensely fruity, this won't deliver either extreme.
Best for: Filter drinkers who like balanced, sweet coffees with a citric lift.
How to Brew This Coffee
A V60 will highlight the lime marmalade brightness and give you the cleanest expression of the washed process. Filter methods work well if you want a slightly rounder, more forgiving cup that emphasises the caramelised sugar sweetness. An Aeropress offers flexibility, letting you dial in body or clarity depending on your recipe.

Sakubel is a washed Mexican coffee from the highlands of Chiapas, produced by Indigenous Tseltal farming communities using traditional shade grown farming methods passed down through generations.
In the cup, expect notes of dried fig, caramelised sugar, and lime marmalade, with a rounded sweetness and a gentle citrus finish. It’s an approachable, well balanced coffee with plenty of character. It works well as both espresso or filter.
Carefully hand picked and slow dried in the cool mountain air of Los Altos de Chiapas, Sakubel is part of a newer wave of traceable Mexican specialty coffee that focuses on quality, community, and expressing the unique growing conditions of the region.
