What to Expect
This washed Timor-Leste from the Rotutu cooperative offers a clean, approachable cup with gentle stone fruit sweetness and a herbal edge. Grown at 1420–1500 metres by 16 farmers in Ermera, it's a coffee that balances the clarity of washed processing with the soft, rounded character Timor-Leste is quietly building a reputation for.
The Cup
The body is medium and smooth, with a silky mouthfeel that doesn't weigh you down. Acidity is moderate and soft — more malic than citric, with apricot sweetness coming through rather than sharp brightness. The rooibos note adds a subtle herbal warmth that sits underneath the fruit, giving the cup a rounded, almost tea-like finish. It's clean, straightforward, and easy to drink without being boring.
Who This Is For
This suits drinkers who want something interesting but not challenging — a step beyond supermarket coffee, but not into experimental territory. It's a solid everyday filter coffee with enough character to keep you engaged.
If you're chasing high acidity or intense fruit-forward flavour, this won't deliver that. It's gentle, not loud.
Best for: Filter drinkers who prefer balanced, approachable coffees with soft fruit and herbal sweetness.
How to Brew This Coffee
A V60 will bring out the apricot sweetness and keep the cup clean and clear. Filter methods work well here too, emphasising the tea-like quality and gentle acidity. For a rounder, fuller-bodied version, try it in an Aeropress — it'll soften the acidity further and highlight the rooibos character.

Process
After harvest, cherries are sorted and depulped before undergoing fermentation to break down remaining mucilage. The beans are then thoroughly washed and slowly dried. This process results in a cleaner, brighter flavour profile compared to other processing methods, making it a great reference point as we explore the same coffee processed in different ways.Details

Filter
A filter coffee machine (or drip coffee maker) is an often electric kitchen appliance that brews coffee by heating water, passing it through ground coffee and a filter, and dripping the finished brew into a carafe.
-
Aeropress
An innovative, portable brewing device that uses air pressure to extract coffee quickly and efficiently. This versatile method allows for experimentation with brewing times and techniques, producing anything from espresso-style concentrates to smooth, full-flavored cups with remarkable consistency.
