What to Expect
This washed Red Bourbon from Forge Valley Roasters walks a tidy line between brightness and comfort. Grown on the slopes of Santa Ana Volcano at moderate altitude, it delivers stone fruit and citrus up front, then settles into dark chocolate and cashew sweetness.
The Cup
The body is medium and smooth, with a rounded mouthfeel that keeps things approachable. Acidity sits in the moderate-to-bright range — you'll notice the citric lift, but it's quickly balanced by the chocolate and nut character underneath. This is a clean washed profile with no funk or ferment, just clear, origin-forward flavour that lets the Red Bourbon variety shine.
Who This Is For
If you want a daily drinker that's interesting without being challenging, this fits. It's balanced enough for anyone who likes their coffee straightforward but not boring.
If you're chasing high-altitude complexity or intense fruit-forward acidity, this won't deliver that level of brightness.
Best for: Daily filter drinkers who want balance, clarity, and a touch of brightness without drama.
How to Brew This Coffee
A V60 will highlight the stone fruit and citrus clarity while keeping the chocolate sweetness intact. Filter methods work beautifully for the same reason — clean extraction, balanced flavour. An Aeropress gives you flexibility to dial in body or brightness depending on your mood.

The El Salvador El Borbollon Coffee Story
We typically favour Natural processed coffees here at Forge Valley Roasters but we couldn't resist this exceptional lot which is a Washed process coffee, the result of a collaborative effort by the esteemed Alvarez family and Luis Rodriguez, the head cupper at the renowned El Borbollon mill. Sourced from a collection of 19 Rainforest Alliance (RFA) certified farms located across the Apaneca Ilamatepec Mountain Range, primarily on the slopes of the Santa Ana Volcano, this coffee represents the best of the region's terroir and sustainable practices.
Cultivated at moderate altitudes, this washed Red Bourbon delivers a beautifully balanced and comforting profile. Expect a bright lift of stone fruits and refreshing citrus, quickly balanced by deep, anchoring notes of dark chocolate and smooth cashew nuttiness. This is a versatile and elegant cup perfect for daily enjoyment however you choose to brew your coffee!

Forge Valley Roasters
Forge Valley Roasters was founded in 2023 by Chris and Tash in North Yorkshire, growing from humble cottage beginnings into a speciality coffee roastery rooted in the landscapes and communities of the North York Moors and Scarborough. Their journey began over 15 years ago and has taken them across the Atlantic and back, ultimately leading them to establish a home and purpose on the North East coast of England. Starting with a small Cormorant roaster in their kitchen and selling at local markets, they gradually built a micro roastery on the grounds of their cottage and expanded into vibrant community spaces, including the Dawnay Estate. Through continuous learning, experimentation, and a deep commitment to craft, they have developed a hands-on approach to roasting that reflects both technical precision and genuine Yorkshire hospitality, supported throughout by a strong and loyal local community.
