What to Expect
A Swiss Water decaf from Peru that doesn't taste like a compromise. Mill Bank Coffee Co. has roasted this to a medium level that brings out chocolate sweetness and a gentle brightness — apple and lime acidity softened by maple syrup roundness.
The Cup
The body sits comfortably in the medium range, smooth and approachable without feeling thin. Acidity is present but gentle — more malic than citric, with apple and lime notes that add interest rather than sharpness. The Swiss Water process has done its job well here, preserving the origin character while softening the edges. You get clean sweetness with chocolate and maple syrup coming through, and none of the flatness that can plague lesser decafs. The cup is balanced and characterful, not muted.
Who This Is For
This suits anyone who wants a proper-tasting coffee without the caffeine, especially if you lean towards approachable, chocolatey profiles with a touch of fruit brightness.
If you're chasing high-acidity, floral complexity or experimental funk, this won't deliver that — it's a clean, balanced decaf that knows what it is.
Best for: Decaf drinkers who want flavour and balance, not just the absence of caffeine.
How to Brew This Coffee
The medium roast and balanced profile make this flexible across methods. Filter brewing brings out the apple and lime brightness while keeping the chocolate sweetness intact. French Press emphasises the body and maple syrup roundness, giving you a fuller, more comforting cup. Aeropress offers control — brew it shorter for more body, longer for more clarity and fruit.

Whilst we wait for the return of our usual Honduras Swiss Water Decaf, we are currently offering this Peruvian coffee from COOPAFSI as a temporary replacement.
Produced by small-scale growers in San Ignacio, COOPAFSI is a long-established cooperative that supports its members through quality-focused coffee production, training, community development and micro-finance services. Much of the coffee is processed on the individual farms before being delivered to the cooperative for quality evaluation and final preparation for export.
The result is a smooth, balanced and characterful decaf with notes of chocolate, apple, lime and maple syrup.
We expect our Honduras Decaf to return soon, but in the meantime this is a bright and enjoyable alternative.

Ways to Brew
-
Filter
A filter coffee machine (or drip coffee maker) is an often electric kitchen appliance that brews coffee by heating water, passing it through ground coffee and a filter, and dripping the finished brew into a carafe.
-
French Press
A French Press (or Cafetiere) is a simple, manual coffee maker that brews rich, full-bodied coffee by steeping coarse grounds in hot water, then separating them by pressing a mesh filter down with a plunger, allowing the coffee's natural oils and sediment to remain for a bolder flavour.
-
Aeropress
An innovative, portable brewing device that uses air pressure to extract coffee quickly and efficiently. This versatile method allows for experimentation with brewing times and techniques, producing anything from espresso-style concentrates to smooth, full-flavored cups with remarkable consistency.
